Our Story

VB3 is a family affair. Chef Michael Colletti, an accomplished Chef who hails from top New York City and Washington, D.C. restaurants, and his cousins/business partners with backgrounds in restaurant ownership and management, have realized their personal dream of collectively opening a modern, seasonal Italian restaurant in their home state of New Jersey.

Chef Michael's cuisine will be composed of small plates of modern, seasonal Italian using fresh, locally sourced ingredients and will include antipasti, salads, pizza, pastas, meat, seafood and vegetable dishes. VB3's 30-seat, custom bar features artisanal and local craft beers, hand-crafted Italian-style cocktails and house-made limoncello, as well as a select wine list. Special Chill-Rite Beer and Shock-a-Vodka Frozen dispensing systems are in place to deliver beverages at their ideal temperatures. Adjacent to the restaurant, VB3 Pizzeria creates artisanal pies and dinners available for eat-in, take-out or delivery.

Food, Atmosphere & Service

VB3 Restaurant & VB3 Pizzeria are open daily for lunch and dinner with no reservations necessary and will offer brunch on Sunday. The after-work crowd is welcome to come and leave behind the cares of the day at happy hour Monday through Friday. The Restaurant will be open after dinner for late night libations and music. Off-premise residential/corporate catering is available and the Restaurant dining room is available to book for private events/corporate meetings.

VB3 Restaurant & Bar and VB3 Pizzeria are in a prime location in Jersey City's 'Gold Coast' waterfront facing the Manhattan skyline in the heart of this business and residential district in the Monaco Building at 475 Washington Blvd., Jersey City NJ. Conveniently located, it is within walking distance from the Path train and public transportation and valet, street, and building garage parking is available.

The Restaurant seats a total of 80 with an additional 25 seats for outdoor seasonal dining. The sophisticated, modern interior was designed by Reva Sloan with Axis architects and contains several focal points including a white textured 'wave' wall, mosaic tile walls, comfy custom-upholstered booths and the custom 'orange liquid lava' bar top.
